SPICY PEANUT BUTTER NOODLES

A luscious spicy peanut sauce tossed through slippery noodles and caramelized shiitake for a umami, nutty goodness

INGREDIENTS

2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed

Neutral cooking oil

For spicy peanut sauce:

1 cup (240g) creamy peanut butter

½ cup (120ml) soy sauce

¼ cup (60ml) rice vinegar

¼ cup (60ml) chili oil crisp

3 tbsp (45ml) toasted sesame oil

3 tbsp (60g) honey or brown sugar

2 tbsp (20g) fresh ginger, grated

2 tbsp (20g) garlic, minced

2 tbsp (30ml) fresh lime juice

½–1 cup (120–240ml) warm water, to thin

To serve (1 portion):

4oz (115g) cooked egg noodles, warm

2oz (55g) spicy peanut sauce

2oz (55g) spicy peanut Fable

1 tbsp (10g) freshly sliced scallions (spring onions)

Optional garnishes:

Crushed peanuts, toasted sesame seeds or chili oil

METHOD

Remove Fable from the bag and add to a bowl. Gently smash the Fable chunks into smaller pieces to expose shiitake fibers.

Whisk together peanut butter, soy sauce, rice vinegar, chili garlic sauce, sesame oil, honey, ginger, garlic and lime juice. Thin with warm water until pourable. You'll use part of this sauce to coat the Fable and the rest to toss the noodles.

Add oil to a very hot pan and add smashed Fable. Cook for 6 minutes, stirring frequently to avoid Fable sticking to the pan. Add a portion of the peanut sauce and stir through for another minute until glossy and caramelized. Serve immediately, or store in hot hold for service or chill and heat to order.

To serve:

Toss warm cooked noodles with the remaining spicy peanut sauce until well coated. Plate the noodles, then top with the warm spicy peanut Fable pulled shiitake. Finish with a generous scatter of freshly sliced scallions, and crushed peanuts, sesame seeds or chili oil if using.

Tips & suggestions:

  • For a fully sauced, hands-off option, sub in the Fable Asian Sweet & Spicy Riblet product in place of the Fable Pulled Shiitake. Comes pre-sauced, so simply cook per package instructions (oven or grill/pan) then fold it straight into the peanut-sauced noodles.
