
SMOKY SHIITAKE QUESADILLAS
A smoky, savory blend of pulled shiitake and cheese pressed to perfection

INGREDIENTS
2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed
2 tbsp smoked paprika
1 tbsp ground cumin
1 tbsp garlic powder
1 tsp chipotle powder
Neutral cooking oil
Salt and pepper, to taste
To serve (1 quesadilla):
1 flour tortilla, 8-10 inch
½ cup Smoky Fable Pulled Shiitake filling
2 tbsp Mexican-style cheese, grated
1 tbsp pico de gallo
Handful of baby spinach leaves
METHOD
Remove Fable from the bag and add to bowl. Gently smash the Fable chunks into smaller pieces to expose shiitake fibers. Mix paprika, cumin, garlic and chipotle spices together in a bowl.
If using combi-convection oven:
Pre-heat oven to 450°F/230°C. Toss smashed Fable lightly in oil and spread evenly on a tray. Cook for 6 minutes. Once cooked, toss or stir through with spices. Serve immediately, or store in hot hold for service or chill and heat to order.
If using fry pan:
Add oil to a very hot pan and add smashed Fable. Cook for 6 minutes, stirring frequently to avoid Fable sticking to the pan. Add spices and stir through for another minute. Serve immediately, or store in hot hold for service or chill and heat to order.
To serve:
On one half of the tortilla, add ½ cup of Smoky Fable Shiitake, cheese, pico de gallo and spinach. Fold tortilla in half to close. Toast on a griddle, flat top or sandwich press for 2-3 mins each side or until cheese has melted. Slice into wedges and serve with a side or sauce.

Fable can be hot held for up to 4 hours.
