SHIITAKE PHILLY CHEESE
Fable takes center stage in this Philly Cheesesteak, delivering juicy texture and deep umami alongside sweet caramelized onions, peppers and melted cheese

INGREDIENTS
2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed and cut into halves
3 tbsp olive oil
4 yellow or brown onions, julienned
1 kg white button mushrooms, sliced
4 green bell peppers, julienned
Salt, to taste
White pepper, to taste
Cheese spread of your choice
Slices of provolone cheese
Soft, long rolls, cut into halves
METHOD
Heat a heavy skillet over high flame and add ½ the olive oil. Sauté onions, mushrooms and bell pepper until caramelized for about 5 mins, then remove from pan and set aside.
Heat olive oil in skillet still on high flame. Add Fable and sauté while stirring for another 5 mins, being sure to continuously scrape the bottom of the pan to catch the bits that stick. When Fable is evenly caramelized, return the onion and pepper back to the skillet, combining all and season to taste.
Lay slices of cheese over the surface, make sure covered completely. While the cheese in the mix melts. Toast the long rolls. Add cheese spread to one side of the toasted roll, then the cheesy Fable filling. Cut in half and enjoy!
Tips & suggestions:
The best Philly Cheese should be made fresh to order. For service efficiency, prepare the Fable, onion, mushroom and pepper filling in advance and hot hold during prep. When ordered, return a portion to the grill for a quick sear and finish with melting cheese.
