
XO NOODLES WITH CRISPED SHIITAKE
Slippery and luxurious noodles coated in a fiery XO sauce, layered with crunch and an unforgettable umami punch that hits you in all the right notes

INGREDIENTS
2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed
6 tbsp neutral oil
8 garlic cloves, finely chopped
3 shallots, finely sliced
3 red chilies, finely chopped (adjust spice levels as needed)
1 tbsp tamari or soy sauce
1 tbsp rice wine or Shaoxing wine
2 tbsp hoisin sauce
1 tbsp oyster sauce
1 tsp sugar
To serve (1 plate):
100g rice noodles, cooked
1 tbsp sesame oil, for tossing
Handful of spring onions, chopped
Steamed bok choy (optional)
METHOD
Shred Fable into smaller strands. Heat 4 tbsp oil in a large wok over high heat. Add Fable and fry for 10–12 minutes until golden and crispy, scraping the pan as needed to prevent sticking. Remove and set aside.
In the same wok, add remaining oil and sauté garlic, shallots, chilies, and dried shrimp until fragrant. Add soy, wine, hoisin, mushroom oyster sauce, sugar, and stir until thick and glossy. Fold in crisped Fable and simmer 2–3 minutes.
To serve:
Cook noodles according to packet instructions. Drain and toss with sesame oil to prevent sticking. Plate noodles, spoon XO shiitake over the top. Garnish with spring onions, coriander, and a squeeze of lime.
Tips & suggestions:
Turn up the heat by adding more chili or chili oil.
XO Fable can be made in advance and kept refrigerated for up to 3 days.
