MISO GLAZED SHIITAKE WARM BOWL

INGREDIENTS

2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed

10 cups brown rice, cooked

4 cups kale, chopped

2 cups julienned carrots

3 cups red cabbage, shredded

1 cup red radish, thinly sliced

2 cups edamame beans, shelled and cooked

For miso glaze:

½ cup white miso paste

¼ cup soy sauce

3 tbsp maple syrup or honey

1 tbsp sesame oil

3 garlic cloves, minced

1 tbsp ginger, finely grated

For shoyu dressing:

¼ cup soy sauce

2 tbsp rice vinegar

1 tbsp sesame oil

1 tbsp lemon juice

1 tbsp maple syrup or honey

METHOD

Combine miso glaze ingredients in a small saucepan. Simmer over low heat for 3-5 mins until slightly thickened. Set aside.

In a separate bowl, whisk together ingredients for the shoyu dressing. Store in a sauce bottle.

Heat oil in a pan over medium-high heat. Add Fable and cook for 6 mins until nicely browned. Add miso glaze and toss to coat. Let caramelize for a further 3-4 mins.

Massage the kale with olive oil to soften. Line up the other fresh ingredients for assembling.

To serve:

For each bowl, scoop 1 cup of warm brown rice, handfuls of cabbage, kale, carrot, radish, edamame, 1 cup of miso glazed Fable and drizzle generously with shoyu dressing.

Tips & suggestions:

  • Multiply the miso glaze recipe and batch make it ahead of time.

  • Crispy fried onions or crushed wasabi peas make excellent toppers!
