FABLE MASSAMAN CURRY

Massaman is the low-and-slow curry that rewards patience…warm with spice, rich with coconut, and just sweet enough to keep you going back

INGREDIENTS

2 × 180g packs of Fable

1 tbsp coconut oil

1 brown onion, cut into wedges

3 tbsp massaman curry paste

13.5 fl oz (400ml) can of coconut milk

¾ cup (200ml) vegetable stock

400g baby potatoes, halved

1 cinnamon stick

4 cardamom pods, lightly crushed

2 bay leaves

1 tbsp tamarind paste

1 tbsp palm sugar or brown sugar

2 tbsp soy sauce

½ cup roasted peanuts

METHOD

Heat coconut oil in a large heavy-based pot over medium heat. Add onion wedges and cook for 3–4 mins until lightly golden.

Add the Fable and cook for 4–5 mins until heated through and starting to brown. Add the massaman paste and stir for 1–2 mins until fragrant and coating the mushrooms. Pour in the coconut milk and stock. Add the potatoes, cinnamon stick, cardamom pods, and bay leaves. Stir to combine.

Bring to a gentle simmer, then cook uncovered for 20–25 mins until the potatoes are tender and the sauce has thickened slightly. Stir through the tamarind, palm sugar, and soy sauce. Taste and adjust — it should be rich, slightly sweet, and gently sour.

Scatter over the roasted peanuts and serve.
