FABLE CHILI CON CARNE
There's a certain kind of chili that earns its place at the table…deeply umami and rich enough to warrant silence between bites

INGREDIENTS
2 × 180g packs of Fable
1 tbsp olive oil
1 brown onion, diced
4 garlic cloves, minced
1 red pepper (capsicum), diced
2 tsp ground cumin
2 tsp smoked paprika
1 tsp chili powder
1 tsp dried oregano
400g can crushed tomatoes
400g can black beans, drained and rinsed
400g can kidney beans, drained and rinsed
250ml vegetable stock
Salt and black pepper, to taste
METHOD
Heat olive oil in a large pot over medium-high heat. Add Fable and cook for 5 mins or until nicely browned. Place cooked Fable in a bowl and set aside. Now add onion to the pot and cook for 3–4 mins until softened. Add garlic and capsicum and cook for a further 2 mins.
Add the cumin, smoked paprika, chili powder, and oregano. Stir to coat. Add browned Fable and cook for another minute, letting the pieces soak up the spices and take on a little color.
Pour in the crushed tomatoes, both cans of beans, and stock. Stir to combine and bring to the boil. Reduce to a simmer and cook uncovered for 20–25 mins, until thickened and fragrant.
Season generously with salt and pepper. Pile into bowls and load up with your toppings.
Serving suggestions:
A dollop of sour cream or coconut yoghurt
Top with fresh cilantro and jalapeños
Serve with warm tortillas or corn bread
