CRISPY SHIITAKE SHAWARMA
Pulled shiitake gets the shawarma spice treatment, wrapped with garlicky tahini and crunchy veg…no rotisserie in sight!

INGREDIENTS
For shawarma-spiced Fable:
2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed
Neutral cooking oil
5 tbsp (75ml) olive oil
⅓ cup (50g) garlic, minced
5 tsp (10g) ground cumin
5 tsp (10g) ground coriander
5 tsp (10g) smoked paprika
2½ tsp (5g) ground turmeric
1¼ tsp (2g) ground cinnamon
Salt and pepper, to taste
Juice of 2–3 lemons
For garlic tahini sauce:
1¼ cups (300ml) tahini
¾ cup (180ml) lemon juice
5 cloves garlic, grated
¾–1¼ cups (180–300ml) water, to thin
Salt, to taste
To serve (1 portion):
1 warm flatbread or pita
1oz (30g) shredded lettuce or cabbage
1oz (30g) sliced tomato
1oz (25g) sliced cucumber or pickles
½oz (15g) thinly sliced red onion
Fresh parsley, roughly chopped
1.5 tbsp (25ml) garlic tahini sauce
2oz (55g) shawarma-spiced Fable Pulled Shiitake
METHOD
Toss the Fable with olive oil, garlic, cumin, coriander, smoked paprika, turmeric, cinnamon, salt and pepper in a large bowl until evenly coated.
Preheat oven to 400°F/200°C. Spread the spiced Fable in an even layer across trays and roast for 8–9 minutes until caramelized at the edges. Finish with the lemon juice.
While the Fable cooks, whisk together the tahini, lemon juice, garlic and salt, thinning with water a little at a time until pourable. Makes enough for all 20 portions with extra for drizzling.
To serve:
Warm the flatbreads. Spread a spoonful of tahini sauce down the center, layer with lettuce or cabbage, then pile on the warm spiced Fable. Top with tomato, cucumber or pickles, red onion and parsley, drizzle with more tahini sauce, and wrap tightly. Assemble to order to keep the wrap from going soggy.

No flatbread on hand? Skip the wrap and serve the spiced Fable over rice or couscous as a Mediterranean bowl instead.
