CRISPY SHIITAKE CARNITAS

A succulent umami-rich pulled shiitake protein base that delivers the same depth of flavor as traditional carnitas

INGREDIENTS

2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed

Neutral cooking oil

1 ½ cup (300g) Mexican spice mix

For sauced version:

½ cup orange juice

½ cup water or stock

To serve (1 taco):

1 flour tortilla

2 tbsp Mexican-style cheese, grated

1 tbsp pico de gallo

½ tbsp salsa

METHOD

Remove Fable from the bag and add to bowl. Gently smash the Fable chunks into smaller pieces to expose shiitake fibers. Have your Mexican spice mix ready.

If using combi-convection oven:

Pre-heat oven to 450°F/230°C. Toss smashed Fable lightly in oil and spread evenly on a tray. Cook for 6 minutes (if adding dry spice) or 9 minutes (if adding sauce). Once cooked, toss or stir through with spices/sauce. Serve immediately, or store in hot hold for service or chill and heat to order.

If using fry pan:

Add oil to a very hot pan and add smashed Fable. Cook for 6 minutes, stirring frequently to avoid Fable sticking to the pan. Add spices/sauce and stir through for another minute. Serve immediately, or store in hot hold for service or chill and heat to order.

Tips & suggestions:

  • Crispy Shiitake protein can be used across all Mexican formats - burritos, bowls, nachos, enchiladas, quesadillas, you name it!

  • Fable can be hot held for up to 4 hours.
